Elite includes the live supporter and referee hub — the shareable link parents and referees use on the day. Pro has everything else: unlimited teams and the full scheduling engine, for tournaments that don't need the live hub.
Free and Pro work fully offline once you've activated your license — no connection needed on the day. Elite's live hub is different: since it syncs scores out to supporters and referees in real time, it needs an internet connection at the venue to work. Worth bearing in mind if you're running at a ground with patchy signal.
